"And believe me, a good piece of chicken can make anybody believe in the existence of God." -Sherman Alexie

Cooking Tips:

  1. It's best to use a Cast-iron baking pan.

  2. This pairs great with my Mashed Potato recipe

  3. Don't mess this up, it's easy...

Ingredients

  • 4 (7oz - 8oz) skinless Chicken Breasts

  • 3 Tbsp. Olive Oil

  • 4 ½ Tbsp. Brown Sugar

  • 1 ½ Tbsp. Chili Powder

  • 1 Tbsp. Salt

  • 1 Tsp. Parsley Flakes

  • 1 Tsp. Black Pepper

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Onion Powder

  • 1 Tsp. Cumin

Directions

  • Preheat oven to 425°F

  • Line a baking sheet with foil and spray with nonstick spray or use a cast-iron baking pan.

  • Place the chicken breasts between two sheets of parchment paper and use a meat mallet or rolling pin to pound it to an even thickness.

  • Next, rub both sides of the chicken with olive oil

  • In a small bowl, combine all of the seasonings and sprinkle evenly over both sides of the chicken.

  • Bake uncovered for 20-25 minutes

  • Remove from oven, cover with foil and let it sit for 5-10 before slicing.

  • Pour any extra juices over the top.
