Taco Pasta: Easy dinner recipe!

If you're familiar with Taco Pasta, then you already know there are about a million different ways to make it! When I started looking into recipes, I was surprised by just how many variations I came across. Everyone seems to have their own little twist on this cheesy, flavorful dish.
Most recipes stick to the same basic ingredients, but I found a few that had me scratching my head. I mean, some people really get creative with what they throw in there! I decided to keep things simple and stick with the bold, delicious Tex-Mex flavors we all know and love. Think seasoned beef, pasta, tomatoes, and plenty of ooey-gooey cheese. It's basically taco night and pasta night rolled into one, and I'm definitely not complaining!
Cooking Tips:
This is probably the most important tip: Make sure your cookware is large enough to cook the meat in. I used a Dutch Oven to cook all ingredients before transferring them into the casserole/baking dish
Chop up all of your veggies first, this takes time since your slicing cherry tomatoes and dicing union.
Be sure to use a lean ground beef, otherwise you will need to drain a lot excess fat
Be sure to sauté the onion and garlic but just a little as they will have more time to cook with the meat.
Ingredients
12 Ounces of any Pasta
2 lbs. Lean Ground Beef
3 Packets of Taco Seasoning mix (or 3 ounces)
2 Tsp Salt
2 Tsp Black Pepper
1 Tsp Cayenne Pepper (optional)
2 Garlic Cloves, minced (2 tsp)
1 Yellow Onion, chopped
2 Cups Cherry Tomatoes, sliced
5 Green Onions, chopped
2 Cups Mexican blend cheese
2 Cups Sharp Cheddar Cheese, shredded
2 Cups Heavy Cream
Sour Cream, (optional for serving)
Directions
Sauté your Garlic and Onion first and set aside.
Add Ground Beef to a large skillet or Dutch oven over medium heat, breaking up the meat as it cooks until brown.
Stir in Taco Seasoning, Cayenne, Salt and Pepper as well as Garlic, Onions, and Cherry Tomatoes.
Cook for 2-3 minutes then add the Heavy Cream and reduce the heat to low.
Next, cook your Pasta according to the instructions and drain.
Add the Pasta to the meat mixer, stir to combine and then mix in your cheeses.
Top off with sour cream and serve!
