One of the greatest things about Banana-Nut Bread is that you can have it for Breakfast, Dessert or even just a snack! You should immediately unfriend anyone who tells you otherwise because you don't need that negativity in your life.
"When life starts going bananas, get some butter and bake banana bread" -Me...I said that
So I reviewed a Banana-Nut Bread recipe in 2019 and there was no banana or butter in it...NONE, folks! They used way too much banana extract, the bread was moist-free and my taste-buds were offended. Needless to say (but I'm gonna say it anyway) that recipe should not be on the internet.
As with my Oatmeal Cookie recipe, I use Saigon Cinnamon instead of the traditional Ceylon Cinnamon to spice up this recipe. The difference in flavorings will amaze you.
Baking Tips
This recipe is easy, so don't mess it up! That's all.
Ingredients:
1 Cup Sugar
8 Tbsp (1 stick) Butter, room temperature
8 Tbsp of unsweetened Applesauce (or 2 Eggs)
3 Ripe Bananas
1 Tbsp Milk
1 Tsp Ground Saigon Cinnamon (Trust me, it's amazing)
2 Cups All-Purpose Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp salt
½ Cup of Crushed Pecans or Walnuts (optional)
Directions:
Preheat the oven to 325°
Blend Sugar and Butter in a mixing bowl until creamy. Add the Applesauce
In a separate bowl, mash the bananas until smooth and creamy. Beat in the Milk and Saigon Cinnamon.
In a separate bowl, sift together Flour, Baking Powder, Baking Soda, Salt and any Crushed Nuts.
Add the Banana mixture to the Sugar mixture and stir until combined.
Next, add dry ingredients and blend.
Butter and lightly flour a 9 x 5 x 3 inch bread pan.
Pour batter into loaf pan, spread evenly and bake 1 hour 12 minutes. Allow bread to cool before transferring.
Serve with Nutella or vanilla ice cream...or both!
